Prime Boneless Center Cut NY Strip

  • Pat dry steaks and bring to room temperature
  • Season both sides heavily with Maldon or sea salt
  • Take cast iron over high heat for 5 - 6 minutes
  • Cook on both sides for 2 minutes and gently press each to give a good sear
  • Continue for a minute more on each side or until internal 110* 
  • Remove from pan and let rest for 5 to 10 minutes before serving
